Mini Cheesecakes

This will make 3 containers that are 1 cup. I used the anchor ones to make mine because they can go in oven. It’s super easy.

Pre-heat oven to 325 Degrees F

1/3 cup graham cracker crumbs (look in cookie section for graham creackers)
1 tablespoon white sugar
1 tablespoon melted butter

Mix all together section divide between the 3 containers on bottom. If you want you can pre-bake the crumb mixture in the bottom of the containers for 5 min to make more crunchy. I usually don’t.

1 (8 ounce) package cream cheese at room temperature
1/4 cup white sugar
2 teaspoons lemon juice
1/2 teaspoon vanilla extract
1 egg

Beat together cream cheese, sugar, lemon juice, vanilla until fluffy and lump free, and then mix in egg. Divide between 3 containers and bake in oven for 25 minutes at 325 degrees F. I like to put the little glass container on a cooke sheet to make it easier. Cool and refrigerate after.

I like to add canned cherries to the top and stick the lid on. They keep for up to a week in those containers.

If you’d like to make 6 just double everything above.
