Simple shiitake pasta.

Light and tasty pasta despite having a cream sauce. The lemon zest gives it a fresh feel and Prosciutto garnish gives it a nice salty flavour. Really basic pasta with a classic kind of feel.

Ingredients

  • Fresh Pasta | I made mine prior and froze it | it’s a roasted purple pepper and pink peppercorn fettuccine

  • Olive oil

  • Shiitake Mushrooms (I prefer fresh)

  • garlic cloves crushed

  • Creme or Creme fraiche

  • Chopped Parsley

  • Lemon Zest

  • Sea Salt

  • Fresh Ground Pepper

  • Sliced Prosciutto as garnish

Directions

  • Cook pasta is salted water – remember fresh pasta cooks fast.
  • Combine olive oil, mushrooms, garlic, and a bit of pasta water to cook for 10 min.
  • Drain pasta set aside with a bit of olive oil
  • Remove fry pan from heat | Add lemon zest, chapped parsley, some pasta water (1/4 C), and cream to mushrooms and stir until mixed and cream has bubbled a bit. Add pasta and stir and plate.
  • Finish with a garnish
