Light weight breakfast.

As a effort to try to conserve as much food as possible these days, I had some edd whites left over from last night’s fresh pasta. I decided to make a little egg white breakfast omelette with some potatoes and fresh blueberries.

I am going to assume most people know how to make an omelette | 2 egg whites, S&P, milk, cayenne, marble cheddar. The potatoes are sliced thin and fried in olive with your preferred spices.

Ingredients

  • 2 Egg whites

  • Milk or Cream

  • Marble cheese

  • Cayenne pepper

  • Salt

  • Pink peppercorn

  • Olive oil

  • fingerling potatoes

  • Salsa

  • Sour Cream

  • Fresh Parsley

Directions

  • Slice potatoes, season, put in hot oil to fry
  • Mix omelette ingredients and cook in small pan with lid
  • Add cheese, fold omelette, take off heat.
  • Plate potatoes and omelette and garnish with salsa, sour cream, parsley.
  • Add fresh fruit to plate.
