As a effort to try to conserve as much food as possible these days, I had some edd whites left over from last night’s fresh pasta. I decided to make a little egg white breakfast omelette with some potatoes and fresh blueberries.
Light weight breakfast.
I am going to assume most people know how to make an omelette | 2 egg whites, S&P, milk, cayenne, marble cheddar. The potatoes are sliced thin and fried in olive with your preferred spices.
Ingredients
2 Egg whites
Milk or Cream
Marble cheese
Cayenne pepper
Salt
Pink peppercorn
Olive oil
fingerling potatoes
Salsa
Sour Cream
Fresh Parsley
Directions
- Slice potatoes, season, put in hot oil to fry
- Mix omelette ingredients and cook in small pan with lid
- Add cheese, fold omelette, take off heat.
- Plate potatoes and omelette and garnish with salsa, sour cream, parsley.
- Add fresh fruit to plate.
